★椒絲腐乳炒通菜 - 超簡單做法 ★
泰興腐乳擁有傳統~家的味道,帶點酒味腐乳,有酒香但食落又不會太濃,鐘情香辣口感🔥可以選擇辣味腐乳,唔好辣朋友仔可以選擇特級腐乳

炒一道青綠色通菜的秘訣在於,炒菜時必須開大火,可令通菜快熟,以免顏色變黑,處理腐乳時,要加入其他醬料,例如紹興酒,以便將其推散變得滑身

預備材料 :
一斤通菜
一湯匙蒜蓉
兩茶匙薑絲
少許辣椒絲
兩至三磚泰興 特級腐乳 / 辣味腐乳
半茶匙砂糖
兩茶匙魚露
兩茶匙紹興酒
兩湯匙生油
一百毫升清水

做法:
- 將腐乳壓爛,加兩茶匙紹興酒,攪勻
- 炒燒熱鍋才放入兩湯匙生油
- 用中火炒香料頭:薑絲,蒜蓉,腐乳醬,辣椒絲,爆香。轉大火,放進通菜。記得下菜後將通菜已經壓一壓,令炒菜時少些水彈出來
- 加半茶匙砂糖調味。將鍋底的料頭和通菜混合,再加兩茶匙魚露,一百毫升清水,上蓋煮一分鐘
- 一分鐘後,可以上碟

📗要炒出青綠色通菜,必須保持大火
